Soft Wrap Flatbread

Delicious and soft flatbread that is perfect for dipping or making wraps and sandwiches.  And this flatbread recipe is so easy, you will wonder why you ever bought it from the store!

The delicious flatbread recipe is one from my friend Melanie at Mel’s Kitchen Cafe.  I use it when I make gyros, soft tacos, when I need something to serve with hummus, or sometimes just with a little honey butter or homemade jam!  And it is also a fun crust for mini pizzas.

Not only is this flatbread yummy, but it is fun to make.  If you are scared of making anything that requires yeast, this is the perfect recipe for you.  I don’t think you could ruining this recipe if you tried.  It uses a rapid rise yeast, so the yeast doesn’t have to be proofed.  You just toss it right in with the flour.

After the dough rises and you have divided it, you roll each ball of dough out into a circle.  Then, the dough is dry fried.  That means you don’t use any oil.  You just cook it in a frying pan or even an electric griddle!  So easy!

It only cooks for a few minutes on each side.  Just until it puffs a little and gets nice golden brown spots on it.  Very similar to how you would cook a homemade tortilla.

Just stack the flatbread up as they come off the griddle and try not too eat too many of them!

Ingredients

  • 3 C unbleached all-purpose flour
  • 1 1/2 C boiling water
  • 1/4 C potato flour OR 1/2 C potato buds or flakes I used potato flakes
  • 1 1/4 tsp salt
  • 2 Tbsp vegetable oil
  • 1 tsp instant yeast*

Instructions

  • Place 2 cups of the flour into a bowl
  • Pour the boiling water over the flour, and stir till smooth
  • Cover the bowl and set the mixture aside for 30 minutes
  • In a separate bowl, whisk together the potato flour (or flakes or buds) and 1 cup of the remaining flour with the salt, oil and yeast
  • Add this to the cooled flour/water mixture, stir, then knead for several minutes (by hand, mixer or bread machine) to form a soft dough – I did mine in my Kitchen-Aid

Note:

  • You can allow the dough to go through the entire kneading cycle(s) in the bread machine, but it’s not necessary; about a 5-minute knead in the machine, once it gets up to full kneading speed, is fine.
  • The dough should form a ball, but will remain somewhat sticky (the dough is fairly stiff, so don’t be worried – just be careful not to overflour the dough).
  • Add additional flour only if necessary; if kneading by hand, keep your hands and work surface lightly oiled.
  • Let the dough rise, covered, for 1 hour (I let mine rise up to 2 hours).
  • Divide the dough into 8 even pieces, cover, and let rest for 15 to 30 minutes
  • Roll each piece into a 7- to 8-inch circle, and dry-fry them (fry without oil) on a griddle or frying pan over medium heat for about 1 minute per side (I cooked mine about 2-3 minutes per side and they didn’t dry out), until they’re puffed and flecked with brown spots.
  • Adjust the heat if they seem to be cooking either too quickly, or too slowly; cooking too quickly means they may be raw in the center, while too slowly will dry them out
  • Transfer the cooked breads to a wire rack, stacking them to keep them soft
  • Serve immediately, or cool slightly before storing in a plastic bag
  • *This recipe works best with instant yeast because it dissolves during the kneading process, so you don’t have to knead liquid into the dough.
  • If you really prefer to use active dry yeast, use only 1 cup boiling water for the initial dough, dissolve the yeast in 1/4 cup warm water, and add this mixture to the dough along with the potato flour mixture.
  • It’ll be somewhat “slippery” at first, but will knead in and eventually become smooth.

Her darling daughter Addy recently turned two and Meg created a fun and magical family celebration for her daughter.

Balloons always add a fun and colorful touch to any party and are the quickest and easy way to establish a color theme.

Here’s what Meg had to say about the special day she created for her daughter:

For my daughter’s second birthday I wanted to keep things relatively low key and thought a tea party day with mom would be a memorable way to celebrate her special day. I spent the weeks prior crafting her a little felt tea set and sewing a darling hostess apron out of her favorite fabric! We spent most of her birthday morning picking up the cake and prepping for our little party. She chose a Cinderella cake and a variety of pink and green balloons. Then we dressed up and played with our treasures. It was a wonderful day, filled with meaningful make believe and a magic that we both enjoyed.

Visits to Santa

Yesterday we continued a 25 year old family tradition- having our family picture taken with Santa.  We alway visit the real Santa too, the Santa at Macy’s in downtown Portland.

I must admit my 23 and 25 year old boys did give me a bit of a hard time this year as they stood in line with dozens of children ten and under!  But they love their mother and they went along to make me happy.

We made it for 25 years  – we’ll see if they’ll give me 26…..

Hot Chocolate Bar

This weekend was our annual Breakfast with Santa.  A fun event we host for some of our neighbors.

You can read more about how this tradition started over at Your Homebased Parties.

Our menu for the party is the same every year – pancakes, little sausages, fruit, juice and hot chocolate.

Each year everyone raves about my hot chocolate.  It’s an old family recipe!  Not really, in fact it isn’t even a recipe it’s only a secret ingredient.

Believe it or not I use good old Nestle’s Hot Chocolate mix.  The trick is to be sure and use whole milk – no skim milk, no 2% – only whole milk!  The other secret ingredient is vanilla.  To one gallon of milk I add a couple of teaspoons of vanilla.  The combination of the the whole milk and vanilla create a rich and creamy hot chocolate that everyone loves and it’s easy!!

We always have lots of whip cream to go with the hot chocolate.  No limits – you can have as much as you want.

This year I decided to take it up a few notches after seeing Real Mom Kitchen’s post on Hot Cocoa and I put together a hot chocolate bar for the party.  It was a huge hit with kids and adults!

We had lots of fun mix ins and toppings.  We had candy canes dipped in white chocolate with white sprinkles to use as stirrers.

And then there were red, green and chocolate sprinkles!  I crushed up malted milk balls, peanut butter cups and Heath bar for yummy mix ins too!  And of course there were mini M & M’s.

What hot chocolate bar would be complete without whip cream – lots of whip cream.  There was also chocolate syrup, vanilla sugar and some Pirouette -rolled wafer cookies to dip and stir with.

The kids, big and little had lots of fun putting together their hot chocolate creations!  We’re leaving the hot chocolate bar up for a few days. We’re going  caroling tonight with friends and will come back afterwards for more hot chocolate fun!

Breakfast with Santa

For many years one of our family’s favorite traditions was having Breakfast with Santa in the beautiful Georgian Room of Meier & Frank in downtown Portland. We would get dressed up in our holiday finery, Beaverton High School would put on a wonderful musical show, Santa would visit each table and we drank lots of yummy hot chocolate!

Several years ago Meier & Frank became Macy’s and the Georgian Room and Breakfast with Santa was no more.  A sad day.  Since our kids had gotten too old for this event any way I decided that it was time to reinvent Breakfast with Santa!

So we decided to host our own Breakfast with Santa.  We invited 3 of our neighbor families, two of which had young children.  We usually hold it the Saturday before Christmas so that my college kids are home and can join us.  Everyone is invited to attend in their pajamas!

The menu is the same as we enjoyed in the Georgian Room – pancakes, little sausages, fruit, juice and hot chocolate.  This year we are throwing an egg dish in for the adults!

Jim is always in charge of cooking the pancakes.  Yummy, fluffy, sour cream pancakes.

There is plenty of hot chocolate and whip cream – the rule is you can have as much whip cream as you want, no limits!

Santa brings a gift for each of the kids – big and small and they all get a turn on his lap!

Last year we were in the middle of Arctic Blast 2008 and Santa had to make his way through the snow, good thing he has those reindeer to help him!!

Our Breakfast with Santa usually lasts most of the morning as we enjoy lingering, spending time together and just hanging out.  It is our Christmas gift to our neighbors and we get as much enjoyment out of it as they do!

Holiday Table Decor

A few weeks ago I hosted my annual Holiday Breakfast.  It is something I do every year for my first line team members who work with me in my direct sales business.

I’ve got the menu pretty well down for that event.  You can check it out here.  Because I can do that breakfast almost on auto pilot it gives me time to think about my table decor.

I always serve the breakfast buffet style so I like to do something to decorate the table or counter from which I serve the food.  Usually I serve off my large kitchen island but this year I decided to do it from the kitchen table.

I pushed the table up against the wall to give people a little more room to move around the table.

I love magazines and have quite a collection at my house.  My favorite thing to do is tear pictures of pretty things out of them and file them away.  I use the photos for ideas or inspiration. In this year’s December issue of Better Homes & Gardens I found a photo that inspired my table decor for my holiday breakfast.

They had used an old wooden sled on the table with a grouping of glass cloches with ornaments underneath.  When I saw the photo I remembered that up in my attic I had an old vintage wooden sled I had picked up several years ago at an antique store.  It was one of those purchases that my husband had said “What are you going to do with that?”  Actually he says that quite often.  My reply of course was “I don’t know, but I’ll find something!”  I knew I loved it and sometime I would need it!

So my nice, kind husband crawled up into the attic to retrieve the sled for me.

Very rarely do I ever purchase something specifically for a table decoration, except for fresh flowers but a lot of times those just come out of my garden.

I love the challenge of looking around my house to see what I have and what I can re purpose as table decor!

Holiday Table Decor

For this decor I used a glass cloche that I have.  I placed it on top of a small green cake stand I had previously purchased at Home Goods and filled it with some ornaments I hadn’t used on my tree.  A few of them I actually removed from the tree to use!  The other little cake stand I also had.  My little addiction to cake stands comes in handy sometimes!

If you don’t have any glass cloches you can also use glass vases and just turn them upside down!

I added a few pieces of artificial greens around the base of the cake plates or if you have cut down a fresh tree use a few of the branches you cut off to get it into the tree stand.

I then just scattered a few more ornaments in the greens.  I think it looks great and I love the height that the sled gave the centerpiece!

Next up was the dining room table where we would be eating.  Again I looked around the house to see what I could use – re purpose!

I decided my little collection of glittery vintage santas would look great as part of the centerpiece.

I used a piece of green chiffon fabric as the base for the centerpiece.  I have a collection of different colors of chiffon squares to use as an anchor for centerpieces.

Just purchase a yard of fabric and then serge the edges or do a small folded hem.  I have even been known to leave the edges raw and tuck them under.

I grabbed another one of those cake stands I am so fond of and a few more ornaments off the tree (my tree has lots of ornaments so these weren’t missed!), another sprig of greens and a few more candles that usually sit in my kitchen windowsill.

I positioned the santas so they were facing different ways so that no matter what side of the table you were on you had a nice view of Santa!

Hostess Gift Idea

The perfect hostess gift

These personalized soap bottles make a perfect hostess gift.

The holiday party season is in full swing.  It may be a little old fashioned but I believe in hostess gifts.

I know how much work and effort goes into throwing a party and I believe the hostess deserves an extra little something.  I know how much I appreciate it when I receive a hostess gift and the thoughtfulness that has gone into the gesture.

Each year I try to come up with some type of hostess gift I can do up ahead of time and have on hand so as I am running out the door to that week’s holiday party or parties I can just grab it and be good to go – no stress or last minute worries.

Earlier this fall I attended a craft night at church.  One of the crafts for the evening were these cute little soap bottles.

They had purchased empty soap bottles and pumps and then we filled them with soap they had bought in bulk at Target (the Method brand)  There are several colors and scents to choose from.  I chose the green Cucumber!

The fun words were printed onto an overhead transparency.  I printed mine up at our local UPS Store (Hi Renae!).  You can personalize it by using the person’s last name – Wilkes’ hands –  or I just left it generic so I didn’t have to worry about who I was giving them to at the time I made them.  You could also use a favorite holiday quote, scripture or words to a carol instead. I was able to fit 4 on a page.

Just cut the transparency down to size, roll it up and then slip it through the top of the bottle.  When you pour the soap in it will hold the transparency piece up against the side of the bottle.

 Add your pump and ribbon and you are ready to go!

Our bottles and pumps were ordered from a website so you may need to store this idea away for next year unless you can find empty bottles locally (try Storables or The Container Store).

Tween Birthday Party

A Tween Birthday Party that includes everything the tween loves – candy, cupcakes and peace signs!

Today’s featured party is one I consulted on.  It was the 12th birthday party for my sweet next door neighbor Molly.  When her mom, Katie, contacted me about helping with the party she told me the party theme was “blue and peace signs.”  Not your everyday birthday party theme but we can work with that!

Katie wanted to do cupcakes and a candy bar.  White cupcakes with all kinds of blue toppings looked very festive and made a great centerpiece for the table!

Oreos dipped in white chocolate with blue sprinkles were also very popular!  Katie used the peppermint Joe Joes from Trader Joes – so yummy!

How to Make a Candy Bar

The candy bar consisted of lots of fun candy.

Since Katie conveniently lives next door to me so we used my collection of white and clear glass containers to give a cohesive look to the table.  We grouped the candy into color themes – there was the blue and white/silver candy…

There were cute little Chinese take out boxes for the girls to fill with their candy and fun little smiley faces and peace signs to decorate the table.

The girls answered some questions to see who knew the birthday girl the best….and played some other fun “tween” girl games like two truths and a lie!  Of course music and a little bit of dancing made for a fun party!

The girls each went home with one of these darling party favors.  I’d been looking for an excuse to use these darling Jones Soda labels I had seen.
