Potato Chip Cookies

I love making cookies. They are pure comfort food to me.  There are just some days where the only thing that will make it better is a batch of homemade cookies.  Ever had one of those days??  Besides making and eating cookies, one of my favorite things to do is to put something into the cookies that you wouldn’t expect.  Remember those caramel corn cookies I shared a while back??  Yeah – those were good.

I also love the sweet and salty combination – putting something salty in with my sweet is always a good choice.  I love chocolate covered potato chips – the perfect combination of sweet & salty.  When my mother sent me a recipe for Potato Chip Cookies I knew it had to be a winner.  I was right.

This cookie has crumbled potato chips in the cookie which gives it a nice light and chewy texture.  But then the cookie is dipped in chocolate and sprinkled with more crushed potato chips.  Oh yeah!

Then place them on a paper lined cookie sheet to allow the chocolate to set up.

I had to give  most of these cookies away because I would have eaten them all!  Seriously.  Loved the sweet and salty combo and the texture of the crushed up potato chips adds a whole other dimension to the cookie.

Potato Chip Cookies

Servings2 1/2 dozenAuthorLeigh Anne Wilkes

Ingredients

  • 1 C butter
  • 3/4 C granulated sugar
  • 3/4 C crushed potato chips
  • 2 tsp vanilla
  • 2 C flour
  • 1 C powdered sugar for rolling dough in
  • 1/2 C crushed potato chips
  • 1 C chocolate chips melted

Instructions

  • In a mixer cream the butter and granulated sugar until fluffy.
  • Add in 3/4 C potato chips and vanilla.
  • Add in flour and mix until just combined. Do not over mix, Dough may seem a bit dry but it will be fine.
  • Form dough into balls and roll into powdered sugar.
  • Place on a greased cookie sheet and press cookies flat with bottom of a glass
  • Bake at 350 for 10 minutes or until golden brown.
  • Cool cookies
  • Melt chocolate chips and dip one end of cookie into melted chocolate.
  • Sprinkle with crushed potato chips.
  • Allow to set.

Caramel Corn Cookies

Caramel Corn Cookies are a fun twist on a favorite cookie. The caramel corn adds flavor and a fun texture to the cookie.

We love cookies at our house and we love caramel corn so why not combine the two!  What’s  not to love about a caramel corn cookie?  We have a little bit of a caramel corn theme going on the blog here this week.  Did you see my Caramel Corn Sundae from Monday??

I am a big fan of adding fun things into my cookies to give it texture and flavor.  Who would have thought that adding caramel corn into your cookie would work?  But it does!

Caramel Corn Popcorn

There are several things I love about this cookie.  The caramel corn doesn’t give the cookie a lot of flavor but it gives it a very fun texture.  The great flavor in this cookie comes from the almond extract.  I am a huge fan of almond.  If you aren’t just substitute vanilla extract instead.

I purchased caramel corn at Trader Joes but the cookie would probably be even better if you made your own caramel corn.  Our favorite caramel corn recipe can be found here.

Caramel Corn Cookie Recipe

Ingredients

  • 1/2 C sugar
  • 1/2 C butter
  • 1 C caramel corn chopped
  • 1 egg
  • 1/2 tsp almond extract
  • 3/4 C all purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 C quick cooking oats

Instructions

  • Preheat oven to 350 degrees.
  • Line 2 cookie sheets with parchment paper.
  • In a bowl beat sugar and butter until light and fluffy.
  • Add in 1/3 C chopped caramel corn and egg.
  • Mix with a spoon, not your mixer (or the caramel corn will be broken down too much)
  • Add in extract. flour, baking powder, baking soda and the remaining 2/3 C caramel corn.
  • Stir in oats.
  • Form into balls and bake for 10-12 minutes or until golden brown around edges.

Caramel Corn Ice Cream Sundae

This caramel corn ice cream sundae is so easy to put together and full of yumminess. Love the crunch the caramel corn adds!
I first had a Caramel Corn Ice Cream Sundae when we were invited over to some friend’s house for dinner.  These friends are amazing, creative cooks and I know whatever they serve is going to be delicious!
For dessert we had this fun dessert.  They had gotten the idea from a fancy restaurant in New York.    I love so many things about this Caramel Corn Ice Cream Sundae.

First,  I love ice cream. In just about any shape or form.  I love caramel corn.  I love a little bit of crunch in my food and the caramel corn provides that.  And last, but not least I love how EASY this is!!

In a matter of minutes you can wow your company or yourself and enjoy a delicious and fun to eat dessert.

There are only four things needed:  ice cream, caramel sauce, hot fudge sauce and caramel corn.  I bought all four of them.  Of course if you are feeling energetic you can make your own of all four things and I have provided links to recipes I have here on the blog.  If  you are short on time and feeling not quite so energetic you can make a quick run to the grocery store to pick up what you need.

The assembly is easy.  Pick a pretty dish and fill the bottom with caramel corn.

Next add in a few scoops of ice cream and then drizzle with lots of caramel sauce and hot fudge sauce.

Be sure and top it off with plenty more caramel corn!
 Then the only thing left to do is grab a spoon and dig in.

  • 2 tbs Hot fudge sauce
  • 2 tbs Caramel sauce

  • Drizzle with hot fudge sauce and caramel sauce
  • Top with more caramel sauce.
