Ground Beef Chili

Ground Beef Chili Recipe

Ingredients

  • 2 pounds 85 percent lean ground beef
  • 2 Tbsp plus 2 cups water
  • Salt and pepper
  • ¾ teaspoon baking soda
  • 6 dried ancho chili stemmed, seeded, and torn into 1-inch pieces
  • 1 ounce tortilla chip crushed (¼ cup)
  • 2 tablespoons ground cumin
  • 1 tablespoon paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon ground coriander
  • 2 teaspoons dried oregano
  • ½ teaspoon dried thyme
  • 1 14.5-ounce can whole diced tomatoes
  • 1 tablespoon vegetable oil
  • 1 onion chopped fine
  • 3 garlic clove minced
  • 1 teaspoons minced canned chipotle chiles in adobo sauce
  • 2 15-ounce can pinto bean
  • 2 teaspoons sugar
  • 2 tablespoons cider vinegar

Instructions

  • Adjust oven rack to lower-middle position and heat oven to 275 degrees.
  • Toss beef with 2 tablespoons water, 1 1/2 teaspoons salt, and baking soda in bowl until thoroughly combined. Set aside for 20 minutes.
  • Meanwhile, place anchos in Dutch oven set over medium-high heat; toast, stirring frequently, until fragrant, 4 to 6 minutes, reducing heat if anchos begin to smoke. Transfer to food processor and let cool.
  • Add tortilla chips, cumin, paprika, garlic powder, coriander, oregano, thyme, and 2 teaspoons pepper to food processor with anchos and process until finely ground, about 2 minutes.
  • Transfer mixture to bowl. Process tomatoes and their juice in now-empty work bowl until smooth, about 30 seconds.
  • Heat oil in now-empty pot over medium-high heat until shimmering. Add onion and cook, stirring occasionally, until softened, 4 to 6 minutes.
  • Add garlic and cook until fragrant, about 1 minute.
  • Add beef and cook, stirring with wooden spoon to break meat up into 1/4-inch pieces, until beef is browned, about 12 to 14 minutes. Add ancho mixture and chipotle; cook, stirring frequently, until fragrant, 1 to 2 minutes.
  • Add remaining 2 cups water, beans and their liquid, sugar, and tomato puree. Bring to boil, scraping bottom of pot to loosen any browned bits.
  • Cover, transfer to oven, and cook until meat is tender and chili is slightly thickened, 1 1/2 to 2 hours, stirring occasionally to prevent sticking.
  • Remove chili from oven and let stand, uncovered, for 10 minutes. Stir in any fat that has risen to top of chili, then add vinegar and season with salt to taste.
  • Garnish with cilantro

Monster Caramel Apples

These  Monster Caramel Apples are fun to make and too much fun to eat!  Serve these Halloween caramel apples to your guests or let the kids have fun making their own!

Fall is the best time for enjoying caramel apples.  And there is nothing more fun than making Halloween caramel apples to enjoy!  I made these Monster Caramel Apples for a few of my favorite little goblins!  These would be a fun treat to serve at a Halloween party or a great Halloween activity to keep excited little hands busy before they head out trick-or-treating.

What to Dip Caramel Apples In.

My favorite caramel to use is Peter’s Caramel. The best way to melt it is in the slow cooker.  And with the slow cooker you can keep the caramel at the perfect temperature for dipping lots of apples!

For the colored candy coating I used Wilton Melts which I love!  I keep a stash of all the colors on hand.

And for the Monster faces, I used royal icing because it sets up nice and hard.  You can buy meringue powder and just add water to it or you can make your own with this royal icing recipe.  It’s easy!

For the eyes I purchased Googly Eyes because I was a bit short on time but you can totally make your own using the royal icing.  I show you how to make your own edible googly eyes here.  Just use some of the royal icing to glue the eyes to the apple.

Bathroom Cleaning Tips

Sharing my daily quick 3 step cleaning routine and bathroom cleaning tips  for keeping your bathroom clean all the time!

Last week I shared  my new white master bathroom remodel.  Thanks for all the lovely comments here on the blog and on Instagram.  I did get a few comments/questions about keeping it clean so I thought a Bathroom Cleaning Tips post was in order!

One thing I know, it is easier to keep a bathroom clean that it is to get it clean!  I am lucky to be starting with a fresh slate with my new bathroom remodel.  Experience has taught me that keeping something clean rather than trying to get something that is dirty clean is so much easier.  My goal is to keep this bathroom clean by using my 3 Easy Step Daily Cleanup Routine.

How to Clean a Bathroom Tips

Tip #1:  Keep Surfaces Clean.  After you use, put it away.  I have been quilty of leaving my makeup and blow dryer out on the counter in the past.  But no more!  I’ve turned over a new leaf and having an outlet built into the back of my drawer for my blow dryer helps.

Tip#2:  Use a 3 step daily cleaning routine.  This routine will save you hours in the bathroom.  You may think you don’t have time to do this but believe me, you don’t have time not to do it.  It saves you time in the long run.  By wiping down the sinks, counters, shower and toilet on a daily basis you will save yourself so much time cleaning.  It only takes about 5 minutes to do this little 3 step routine.  Here is how:

First, before you jump in the shower give your toilet a squirt of toilet bowl cleaner.  Let it sit while you shower and then after you are dried off give it a nice swish or two with the toilet brush.  Use a rag to wipe any accidental drips or spills around the base of the toilet too.

Second,  before you get out of the shower be sure and squeege your walls and glass doors if you have them. Always, and I mean always squeege off tile walls and glass.  You will not get a soap scum build up and your tile and glass will look great for years!!  Use a cleaner on it once a week.

I love my little shower squeege and it makes a huge difference in keeping my bathroom clean!  Since our tile is all new we made sure to seal all the tile too so that will help it keeping it clean.

Third,  after you down with your hair and makeup, use a nice soft microfiber cloth to wipe out the sinks and the counters. (A different one than you used to clean up around the toilet :)!  Use cleaner if necessary.  I don’t always use a cleaner when I wipe down but once or twice a week I do.

That quick little 3 step routine will do wonders for keeping your bathroom clean all the time!

If your tile does get dirty get yourself a nifty little grout brush and some HDX Shower, Tub and Tile Cleaner for easy cleaning.

Be sure and get those toothpaste splatters on the mirror when they are fresh, so much easier to remove. A microfiber cloth and some HDX Glass Cleaner will do the job.

Tip #3 – Store cleaning supplies where you use them.  That means you store all the cleaners you use to clean your bathroom, in your bathroom.  That way they are easy to grab and convenient.  I keep mine under the bathroom sink.  I can just grab and clean!

One of my favorite cleaning tools are these white HDX Easy Erasers.  Because of all my white woodwork they are the perfect thing to use to clean up makeup marks etc. that are sure to get on the woodwork.

Cleaning Tip #4: Keep the Floor Swept. I have a specific broom just for my bathroom floor.  It doesn’t get used in the garage or outside.    Sweeping your bathroom floor on a regular basis helps to keep the tile clean.  Removing the surface dirt often will help keep the tile clean much longer.

White Master Bathroom

I pretty much want to live in my new master bathroom remodel.

We have lived in our current house over 20 years and raised four chidren here.  After that amount of time, a house gets tired.  Especially bathrooms.  Not only was our master bathroom tired, it was dated and it was in desperate need of a facelift.  Not just a facelift but a complete overhaul!

I have been in the redecorating mode lately.  You can see my living room redo here  and my master bedroom redo here.

Yes, my husband loves baseball caps.  This is only a small part of the collection – you should see my garage where he hangs them all from the ceiling!!

Welcome to my new bathroom!

Master Bathroom

Our house was built in the 90’s.  I guess the thing to do in the 90’s was carpet your bathroom, I’m not sure why???  I was anxious to get rid of the carpet out of the bathroom and the dated  dark teal tile I had used as an accent tile and the old jacuzzi tub.

I wanted a white bathroom.  I wanted it white and bright and clean.  I wanted a classic vintage style and most of all, I wanted a claw foot bathtub!

I’ve dreamed about this tub for a long time.  My husband is actually the bath taker in our house so he was all on board.  I wanted it mainly because it is so pretty!

We took out the original linen closet and had a custom built cabinet made.

We used square Kohler undermount sinks that are nice and deep and Kohler Polished Chrome faucets.

The first home we bought was built in 1911 and it had the small six sided tile on the bathroom floor and I loved it so I knew I wanted to use that for the remodel too.

One thing this floor has though that the other floor didn’t, is that it’s heated!  No cold floors on a cold winter morning!

We also used a smaller version of the tile on the shower floor.  The other thing my husband loves, loves, loves about our bathroom remodel is the new shower head we put in.  It’s pretty amazing!

There was also a new pretty Kohler toilet.

While my husband loves the new shower head (I do too) I think my favorite thing about the remodel is this nifty thing in one of the drawers.

It’s an electrical outlet in the drawer so I can leave my blow dryer plugged in, right in the drawer!!  Love!!

I've dreamed about this tub for a long time.

Our counter tops and baseboards are Carrera marble.  I had the large mirror made by a local glass place here in Portland.  I went with one large mirror , instead of two smaller mirrors, to really open up the bathroom.

We added new doorknobs too, a pretty vintage inspired glass knob.  All my hardware came from Chown Hardware in Portland.

For the window I ordered a linen roman shade from The Shade Store and had drapes made using Caitlin Wilson Textiles  beautiful Grey Silhouette fabric.

The new vintage inspired  Covington Hotel Double Sconce light fixtures are from Pottery Barn.

I’m pretty much in love!  Now I want to redo the rest of the bathrooms!
